Galangal Chilli Sauce

Ingredients

  • 4-5 Rawit Chillis, seeds removed
  • 1 1/2 tbsp Sliced Galangal
  • 10 Cloves of Garlic, peeled and diced
  • 4 Calamansi, juiced
  • 1 1/2 tbsp fish sauce
  • 1 tsp sugar to taste
  • 1/2 tsp salt to taste

Optional: 2-3 Sawtooth Coriander leaves, sliced

Directions

  1. Process your Rawit Chillis, Galangal and Garlic Cloves in a food processor on pulse or manually with a mortar and pestle
    • Add Sawtooth Coriander for an added kick in flavor
  2. Place in a bowl
  3. Mix in fish sauce, Calamansi juice, sugar and salt
  4. Enjoy!
